I love to cook with seasonal fruits and vegetables, and now it’s officially autumn it’s the perfect time to bake a warm and comforting apple cake.
This apple cake is absolutely scrumptious and best just out of the oven when its still warm and soft. Enjoy!
Scrumptious Apple Cake
Begin by peeling and chopping two of the apples into small chunks and popping into a large mixing bowl
Thinly slice the 3rd apple and lay on the base of a greased, 7inch baking tin or loaf tin.
Add your dry ingredients (flour, sugar, cinnamon, bicarb, baking powder) to the mixing bowl and stir well.
Add your wet ingredients (yogurt, milk and coconut oil) and stir until well combined.
Pour the mixture into your baking tin and bake on 180 for 40 minutes. Baking time may vary on your oven, so I recommend checking after 30 minutes and covering with foil to avoid the top layer burning.
Allow to cool for 15-20 minutes before turning out.
