I love to cook with seasonal fruits and vegetables, and now it’s officially autumn it’s the perfect time to bake a warm and comforting apple cake.
This apple cake is absolutely scrumptious and best just out of the oven when its still warm and soft. Enjoy!

Instructions
- Begin by peeling and chopping two of the apples into small chunks and popping into a large mixing bowl Thinly slice the 3rd apple and lay on the base of a greased, 7inch baking tin or loaf tin.
- Add your dry ingredients (flour, sugar, cinnamon, bicarb, baking powder) to the mixing bowl and stir well.
- Add your wet ingredients (yogurt, milk and coconut oil) and stir until well combined.
- Pour the mixture into your baking tin and bake on 180 for 40 minutes. Baking time may vary on your oven, so I recommend checking after 30 minutes and covering with foil to avoid the top layer burning.
- Allow to cool for 15-20 minutes before turning out.
