Preheat your oven to 180°C (roughly gas mark 4 or 5) and grease a small deep baking tray. I prefer to use silicone moulds as I find these easier to release the flapjacks once baked, but whatever you have to hand will be fine.
Place the butter and syrup (or honey) in a pan and bring to a gentle simmer. Once melted add the peanut butter and stir well.
Add the oats and mix thoroughly to ensure all the oats are nicely covered.
Pour the mixture into your baking tin and push down to compact the mixture and create a flat surface.
Bake for 15-20 minutes until golden brown. Don’t forget flapjacks will harden as they cool, so better to be a little underdone than overdone!
Once baked leave to cool for 10 minutes before cutting into squares.
