Honey Loaf with Sticky Icing

This melt in the mouth honey cake is the perfect tea time treat. It is easy to make and the icing is so incredible you will be spooning it from the bowl!

  1. Preheat the oven to 170 – 180 degrees celsius and grease a large loaf tin with coconut oil.
  2. Begin by making your flax eggs and leave to set for 10-15 minutes in the fridge.
  3. Combine the honey, coconut oil and milk and slowly pour into the bowl with the dry ingredients. Add the flax eggs into the rest of the mixture and stir until well combined.
  4. Bake in the oven for around 40 minutes, or until the centre is cooked. The time may depend on the heat of your oven.
  5. Whilst the cake is baking away, make a start on the icing by adding all of the ingredients to the food processor and blending until smooth and creamy.
  6. Once the loaf is cooked, leave to cool for 15 – 30 minutes, apply the icing and serve.
  7. I absolutely love a slice with a cup of tea whilst it is still warm from the oven, but it is equally as delicious served cold.
