This is one of the first recipes I created when I started baking without eggs, dairy, gluten and sugar and I find myself going back to it time and time again. I absolutely love anything chocolate orange but always used to find shop bought treats to be too sickly. This is just the perfect amount of orange, and combined with the avocado, peanut butter frosting it is truly irresistible.

Chocolate Orange Cake
  1. Begin by making the flax egg by combining 2 tbsp flax seeds with 5 tbsp of water in a small beaker or ramekin dish.
  2. Add the flour, almonds, polenta, cacao, salt and baking powder to your mixing bowl.
  3. Blend your soaked dates in the food processor to form a thick paste. If they are a little sticky add a splash of the dairy free milk to help the consistency.
  4. Zest and juice your orange and add your milk, flax egg, oil and date paste to the bowl with the dry ingredients. I usually save a little orange zest to decorate with at the end.
  5. Stir well to combine the ingredients and transfer into your baking mould or tin.
  6. Bake for 30 minutes on gas mark 5-6 (180-190) or until a knife comes out clean.
Chocolate Avocado Ganache
  1. Blend the avocado, cacao powder, maple syrup, peanut butter and coconut oil for 2-3 minutes or until it has formed a smooth and creamy texture.
  2. Once your cake has sufficiently cooled, generously spread the ganache over the cake. Finally, use your extra orange zest to decorate your cake with.
