CHOCOLATE CHIP BANANA & COCONUT LOAF

When I first set up Hannah’s Pantry I was super keen to get myself to a Farmers Market, Greenwich Market to be precise. Turns out the stall was just the beginning and the past 6 months have been a total whirlwind to say the least.

This loaf was one of my first vegan and refined sugar free creations and I knew my stall wouldn’t be complete without it. Safe to say it was a hit and is pretty much always one of the first to sell out – turns out people love both bananas and chocolate and what’s better than the two combined!

Being refined sugar free this scrummy loaf is totally guilt free, and doesn’t need a million ingredients which I bet you probably already have  in your kitchen.

It’s an absolute doddle to make – infact my boyfriend (who is a bit of a new kid on the baking block) baked it just last Sunday and found it easy peasy.

Instructions
  1. Combine the flour, baking powder and dessicated coconut in a large mixing bowl.
  2. In a separate bowl mash the bananas.
  3. Add the milk, oil, agave and vanilla to the bananas and gently whisk to combine.
  4. Make a well in the centre of the bowl of dry ingredients and slowly pour in the wet ingredients folding gently.
  5. Chop the chocolate into small bite size pieces and add to the mixture.
  6. Bake for 35 minutes (you may need to cover for the last 10 minutes if it is browning off quickly)
