Apple, Cinnamon and Raisin Loaf

This awesome apple, cinnamon and raisin cake is loaded with fruit, super easy to make and the most perfect treat!

I whipped up a loaf this afternoon as Iโ€™ve not been feeling my best, my Endo has flared up and I have been craving something sweet and comforting.

The cinnamon adds the perfect touch of sweetness, not to mention has huge anti-inflammatory properties which is a great addition to my foods when my Endo is bad.

The recipe itself is hearty and healthy. It is pretty much made up from fruit and nuts which make it oh so satisfying, especially curled up on the sofa with a large cup of tea in my favourite anthropology mug. What could be better when youโ€™re feeling a little under the weather?

Instructions
  1. Begin by cooking the apples with one tsp cinnamon on a low heat until soft.
  2. Once cooked blend with all the remaining ingredients (except the pecans and raisins) to form a smooth mix. Now stir through the raisins and pecans until evenly distributed.
  3. Cook on a medium heat (gas mark 5) for 40 minutes, covering with foil for the last 15 to make sure the top doesnโ€™t catch and burn.
  4. Make sure to leave in the tin to cool for 10 minutes before serving as the loaf is very soft and may break easily.
