These little beauties are my go to when I need a sweet kick without indulging on something naughty. I always store a batch in the freezer so I have a healthy snack to hand when I’m in need of a 3pm pick me up.
Almond & Cacao Energy Balls
Begin by placing the almonds in the food processor and blitz until they are nicely crushed.
Combine the rest of the ingredients (except coconut) and blitz again until it is all fully mixed. You may need to stop and scrape down the sides every now and then.
Add the coconut and mix again until well combined.
Take one tablespoon of mixture and using your hands roll into a ball. Place in the fridge for one hour before consuming to allow the mixture to set.
This mixture should make approximately 12 balls depending on how large you roll them and will keep for up to 2 weeks in the fridge.
